SAMATE' takes its name from the dialect name referring to the town of San Matteo where we anchored our origins. It is obtained from Chardonnay grapes harvested by hand exclusively in the property's vineyards. SAMATE' is the result of our exciting challenge and constant search for excellence in the Classical Method. The elegant aromas of peach and pineapple are integrated with citrus aromas and notes of yeast and toasted bread on which subtle aromas of toasted hazelnut and butter are grafted. The fine perlage gives a refined effervescence to the palate enriched by exquisite minerality which persists elegantly after swallowing

ORIGIN

The Chardonnay grapes used to obtain SAMATE' come from the “Val d'Oca” vineyard between San Matteo and Sabbioni, in the province of Mantua in Lombardy, in that strip of land which, alongside the Oglio natural park, is wedged into the Po river. The soil is characterized by the deep layer of clayey alluvial sediments which guarantees a high water retention capacity and constant supply of nutrients. The presence of a delicate superficial calcareous vein requires the vine to carry out selective and delicate root absorption. The intermediate climate between oceanic and Mediterranean in conjunction with the most passionate care of the vineyard constitute fundamental ingredients for a wine of balanced structure and exquisite minerality.

Seafood and Shellfish: The freshness and minerality of SAMATE' go well with seafood such as oysters, shrimp, and lobster. You can also consider sushi and sashimi. Light Starters: Try pairing SAMATE' with light starters such as fish carpaccio, tuna tartare or seafood salad. Raw Ham or Smoked Salmon: The delicacy and complexity of SAMATE' are well suited to delicate flavors such as raw ham or smoked salmon. Fresh Cheeses: Fresh and creamy cheeses, such as buffalo mozzarella, fresh goat's cheese or goat's cheese, are excellent pairings with the freshness of this Blanc de Blancs. Fish Dishes: In addition to seafood, you can combine SAMATE' with more delicate fish dishes such as sea bass fillet, sole or trout. Vegetarian Dishes: Fresh green salads, mushroom risottos or vegetarian dishes based on spring vegetables pair well with the lightness and acidity of SAMATE'. Light Asian Dishes: Lighter Asian foods, such as sushi, tempura and Japanese cuisine in general, can be paired with the freshness of SAMATE'. Poultry-based dishes: SAMATE' is suitable for accompanying poultry-based dishes, such as roast chicken or turkey breast, thanks to its lighter structure and lively acidity. Summer Salads: Summer salads with ingredients such as strawberries, avocado, nuts and fresh cheese can be perfect in combination with SAMATE'.
