PAION takes its name from the dialect name referring to the town of Sabbioni where the winery is located and near which the Val d'Oca vineyard is located. It is obtained from Grappello Ruberti grapes harvested by hand exclusively in the property's vineyards. PAION is an expression of our courageous adventure and constant search for excellence in the classic method. The varied floral profile among which the freshness of gladiolus emerges, blends with hints of fresh red fruits, such as strawberries, raspberries, berries and notes of spices such as black pepper and cloves. Notes of yeast and toasted bread recall the long aging process. The refined structure, the very fine perlage and the exquisite minerality of PAION accompany you long after swallowing
ORIGIN
The Grappello Ruberti grapes used to obtain PAION come from the “Val d'Oca” vineyard between San Matteo and Sabbioni, in the province of Mantua in Lombardy, in that strip of land which, alongside the Oglio Natural Park, is wedged into the river Po.. The soil is characterized by the deep layer of clayey alluvial sediments which guarantees a high water retention capacity and constant supply of nutrients. The presence of a delicate superficial calcareous vein requires the vine to carry out selective and delicate root absorption. The intermediate climate between oceanic and Mediterranean in conjunction with the most passionate care of the vineyard constitute fundamental ingredients for a wine of balanced structure and exquisite minerality.

Light Starters: Accompany PAION with light starters such as fish or meat carpaccio, tartare or seafood salads. The freshness of the wine goes well with delicate flavors. Sushi and Sashimi: PAION can be an excellent companion for Japanese cuisine, especially sushi and sashimi. Its acidity and complexity can balance flavors like raw fish and wasabi. Fresh and Creamy Cheeses: Accompany PAION with fresh cheeses such as brie, camembert, or goat cheeses. The creaminess of the cheeses pairs well with the structure of the wine.
