GIORGIO is a tribute to the scrupulous precision and extraordinary passion of our father. The Ancellotta grapes are harvested by hand from owned vineyards and placed in small boxes where a long drying process takes place. Winemaking is characterized by prolonged maceration on the pomace. The refinement process lasts for at least 24 months, the first six of which in barriques (225 litres) and the following eighteen in oak tonneaux (500 litres).
GIORGIO is characterized by its extraordinary garnet red colour, the refined aroma with hints of black cherry, liquorice with notes of spices, white pepper, coffee and tobacco. The velvety, intense, harmonically complex taste is enriched with exquisite minerality which persists long after swallowing.
ORIGIN
The Ancellotta grapes used to obtain GIORGIO come from the “Val ad li Teri” vineyard (a dialectal expression indicating the Valley of the Vineyards) near Sabbioneta (a World Heritage Site protected by UNESCO). The soil is characterized by the deep layer of clayey alluvial sediments which guarantees a high water retention capacity and constant supply of nutrients. The presence of a delicate superficial calcareous vein requires the vine to carry out selective and delicate radical absorption which enriches the mineral content of the grapes. The climate intermediate between oceanic and Mediterranean in conjunction with the most passionate care of the vineyard in every detail constitute the fundamental ingredients for a wine of exquisite depth of taste and structure.
PAIRINGS AND TASTING TIPS
Red Meats: GIORGIO is ideal with red meats, fillet and wild boar. Its structure and tannins go well with the intense flavors of grilled meats. Matured Cheeses: Matured and hard cheeses, such as Parmigiano-Reggiano thirty-six months and Pecorino Sardo. Game: Game-based dishes, such as pheasant and hare, are excellent with GIORGIO which can support the intense flavors and complement the taste sensations. Truffle: GIORGIO is an excellent pairing with truffle-based dishes, both white and black, due to its intense and complex flavours. Dark Chocolate: GIORGIO pairs surprisingly well with dark chocolate and chocolate-based desserts. Meditative Tastes: GIORGIO is ideal as a meditation wine: it can be enjoyed alone or with a selection of chocolates, nuts or dried fruit.
