BACEN takes its name from the dialect name of the majestic drainage pumping plant located between San Matteo and Sabbioni, where the winery is located. It is obtained from Pinot Noir grapes harvested by hand exclusively in the property's vineyards. BACEN is the result of our exciting challenge and constant search for excellence in the Classical Method. Delicate aromas of wildflowers and roses intertwine with citrus notes such as blood oranges and grapefruit peel. Hints of almond, dried fruit and tobacco open up to the refined structure and very fine perlage of BACEN whose exquisite minerality accompanies you long after swallowing
ORIGIN
The Pinot Noir grapes used to obtain BACEN come from the “Val d'Oca” vineyard between San Matteo and Sabbioni, in that strip of land which, alongside the Oglio natural park, is wedged into the Po river. The land is characterized by the deep layer of clayey alluvial sediments which guarantees a high water retention capacity and constant supply of nutrients. The presence of a delicate superficial calcareous vein requires the vine to carry out selective and delicate root absorption. The intermediate climate between oceanic and Mediterranean in conjunction with the most passionate care of the vineyard constitute fundamental ingredients for a wine of balanced structure and exquisite minerality.
PAIRINGS AND TASTING TIPS
Grilled Fish and Seafood: BACEN is ideal with grilled fish and seafood, such as prawns, calamari and cuttlefish. Parma Ham: BACEN pairs well with a selection of cured meats such as Prosciutto Crudo di Parma with a minimum maturation of twenty-four months. Soft and Creamy Cheeses: Accompany BACEN with soft and creamy cheeses such as briè, camembert and goat cheeses. Roasted or Sauceed Poultry: BACEN can accompany roasted poultry dishes, such as chicken or turkey, or richer and tastier dishes based on poultry meat in sauce. White Meat Dishes: Pair it with thinner white meats, such as veal or pork, it can be particularly suitable if the meat is prepared with light or fruit-based sauces. Asian Cuisine: BACEN pairs deliciously with light Asian cuisine, such as Sushi and Sashimi. Porcini Mushrooms: Dishes based on porcini mushrooms, such as risottos or mushroom pasta, are enhanced by the complex structure of BACEN.
